Brookies ☺️🤎 For those moments when you just don’t want to choose.  Ingredients: For the brownie layer: Eggs – 3 pcs Sugar – 200 g Dark chocolate (60–70%) – 200 g Butter – 150 g Flour – 100 g Cocoa powder – 1–2 tbsp Salt – a pinch Vanilla extract – 1 tsp (optional) Chocolate chips – ½ cup (optional) For the cookie layer: All-purpose flour – 185 g Baking soda – 2 g Butter – 115 g Sugar – 60 g Brown sugar – 65 g Salt – 2 g Egg – 1 pc Chocolate chips – 100 g Instructions Brownie layer: 1. Whisk the eggs and sugar together until light and slightly fluffy. 2. Melt the dark chocolate and butter together over a double boiler or in the microwave. Mix until smooth, let cool slightly, then add to the egg mixture and mix well. Add the salt and vanilla extract, if using. 3. Sift in the flour and cocoa powder and gently mix until combined. 4. Add the chocolate chips and mix until evenly incorporated. Cookie layer: 5. In a bowl, sift the flour and baking soda together and set aside. 6. In a separate bowl, beat the butter for about 2 minutes, until it becomes lighter in color. 7. Add the white sugar, brown sugar, and salt. Continue beating on medium speed for about 1 minute, until smooth and creamy. 8. Add the egg and beat on low speed for about 15 seconds, or until just combined. 9. Gradually add the flour mixture and mix on low speed until a smooth dough forms. 10. Add the chocolate chips and mix until evenly incorporated. 11. Line a baking pan with parchment paper. Spread half of the brownie batter evenly over the bottom. Add spoonfuls of half of the cookie dough on top. Then add another layer of the remaining brownie batter, followed by the remaining cookie dough. Gently spread each layer as evenly as possible. 12. Bake at 180°C (355°F) for 25–35 minutes. Be sure to check with a toothpick, it should come out almost dry, with just a few small brownie crumbs attached. 13. Let the brookies cool completely before slicing.
