@letsavvataste: I Tried Fermented Raw Pork… Here’s How it Went Vietnamese fermented pork, known as Nem Chua which I found it in my local Asian supermarket. Curiosity got the better of me, so I had to give it a go. Made with ground pork, garlic, chilli and pork skin, it’s cured and left to ferment for up to 72 hours… and yes, it’s eaten without cooking. After psyching myself up, I finally tried it and the flavour completely surprised me. Slightly sweet, seriously garlicky, with a proper chilli kick… but the texture? That’s another story.
