@glowwithella: Thai-inspired coconut poached salmon 🥥 Ingredients - 2 salmon filets - 1 can of full-fat coconut milk - 1 tsp lime zest - Juice of 1 lime - 1 sprig lemongrass - Salt My method: 1. Pat dry and generously salt salmon filets, set aside 2. Pour coconut milk in a skillet and place over medium heat, stirring occasionally until smooth and creamy 3. Clean and zest lime, chop lemongrass and juice lime, add everything into coconut milk 4. Place skillet back over low heat and bring to a light simmer, stirring 5. Place salmon filets into the sauce face down, until they are fully submerged, place a lid on top 6. Poach for 8-12 minutes over a gentle simmer, or until the fish reaches an internal temperature of 145 F and is perfectly flakey, then remove from heat immediately (I like to flip the filets 3/4 of the way through to get an even poach) 7. Serve with rice and veggies of choice, pour coconut milk sauce all over the top and enjoyyyy!!! (Option to top with more lime zest, coconut aminos & flakey salt!)
