@georginaelizat: Puttanesca gnocchi bake An easy weeknight dinner. All of those yummy flavours of a puttanesca but in baked gnocchi form! 3 small garlic cloves 6 anchovies (choose the ones in olive oil) 2 tbsp / 30g extra virgin olive oil (+ extra for serving) 400g / 1 1/2 cups finely chopped tomatoes @muttipomodorouk 100g / 1/2 cup black olives 25g/ 1/8 cup capers 500g fresh gnocchi 2 tbsp chopped fresh parsley (optional) 1 ball (125g) mozzarella Chop your garlic. Put the olive oil into a large frying pan on medium heat. Add the chopped garlic and anchovies and cook for around 2 minutes, stirring occasionally. Then add the tomatoes, olives (some halved, some whole), capers and mix. Leave to simmer on a low heat for around 15 minutes, stirring occasionally. The sauce should thicken slightly and the taste will intensify. In this time, pre-heat your oven to 180C/ 350F. Add gnocchi to your sauce and mix then add to a baking tray and top with torn mozzarella. Bake for 20 minutes. Serve and top with a drizzle of olive oil and chopped parsley. #gnocchi #puttanesca #gnocchibake #pastabake #cheese
