Leave your mushrooms uncovered in the fridge for a couple of days. They'll dehydrate nicely.

The problem with this analogy is, mushrooms can't overcook, evaporate all the water, put some fat in, and it'll start browning no problem It even arguably browns better than putting the fat up front while the mushrooms absorb it
