Lightly grease a frying pan with vegetable oil. 2. Crack both eggs into a bowl. 3. Hold a slotted spoon over the cold pan. 4. Carefully pour the eggs onto the spoon so the egg whites flow through the holes onto the pan, while the yolks remain in the spoon. 5. Allow the egg whites to spread across the pan in a thin even layer. 6. Turn on low heat so the pan heats gradually and the egg white cooks evenly. 7. Cook for about 2–3 minutes, until the white is mostly set but still flexible. 8. Gently place one yolk in the center of the cooked egg white. 9. Using a spatula, fold the egg white over the yolk from four sides, forming an envelope. 10. Cook for about 30–60 seconds more, just until the shape holds. 11.
