![Pad Thai - the street food that unified a nation. Quick and easy recipe - [ ] In a hot oiled wok, fry 3 chicken thighs cut into strips until they have colour. Then add 1 sliced onion and cook for few mins. (Your wok should be on high heat). - [ ] Add 3-5 crushed garlic cloves, a handful of beansprouts and then any other veggies you want (I added some green beans) but not too much - don’t over complicate! Stir fry for a couple more mins. - [ ] Move everything to the side and add and scramble 3 eggs, then once scrambled mix through. - [ ] Add 200g cooked Thai style rice noodles and toss. - [ ] Add in your sauce (2tbsp tamarind paste, 1.5tbsp fish sauce, 1tbsp soy sauce, 1.5tbsp sugar and 0.5tsp chilli flakes with optional tsp lime juice).
