Using a sharp knife, make several slits across the folded dough, leaving one edge intact. Gently curve or fold the dough over itself slightly to create the layered brioche look, then place on a parchment-lined baking sheet. Repeat with the remaining dough. Cover the shaped rolls and let rise for 30–45 minutes until puffy. Preheat the oven to 350°F (175°C). Whisk together the egg and milk and brush over the tops of the rolls.
