@luckydragonsupperclub: Love this squeezy bottle from @Moro Olive Oil ! Make something tasty with it. Marinated olives with whipped goat’s cheese and toasty almonds: 1 jar (230g) pitted green olives, drained, roughly chopped 2 garlic cloves, roughly chopped ½ tsp each: fennel seeds, coriander seeds, chilli flakes ¼ cup flaked almonds 2 strips of orange or lemon peel ¼ cup Moro Extra Virgin Olive Oil 1 handful chopped fresh soft herbs of choice (ie parsley, coriander or oregano) 80g goat cheese 80g greek yoghurt 1-2 squeezes of Moro Extra Virgin Olive Oil Warmed bread to serve (I’m using pita) Starting with a cold medium sized saucepan, combine olive oil, fennel seeds, coriander seeds, chilli flakes, orange peel and garlic. Gently infuse over LOW heat for 3-4 minutes, stirring occasionally, to prevent anything from burning. Add the flaked almonds and toast gently for 2-3 minutes then stir in the olives. Once warmed through, take off the heat and toss through chopped herbs. Meanwhile, blitz up goat cheese, yoghurt and olive oil until smooth. Spoon the whipped goats cheese mixture onto a plate, piling the marinated olives with the oil on top. Serve with warmed pita bread.
