MEAL POWER PREP ⚡️ Welcome to my new meal prep series, where I show you how to meal prep properly. I’ve been in and out of the gym over the past few years and one thing I’ve noticed is that I am bored of the same old chicken and rice everyday, so I wanted to make high protein meal preps fun, healthy and nutritious again.  Here is my gut friendly, Peri Bowl with 60g protein & 566 calories. This recipe makes 5 portions, the macros are below. Per portion (1): Chicken thighs (200g, boneless skinless): 50g Red kidney beans (50g): 4.4g White beans (50g): 4.9g White rice (50g): 1.3g Sweet potato (25g): 0.4g Total Protein: ~61g (5 servings) 1kg chicken thighs/breasts 1/2 cup peri marinade (recipe in comments) 250g cooked red kidney beans 1 large onions 4 large plums 25g chopped coriander 2 tbsp extra virgin olive oil  2 lemons squeezed Salt to taste 250g cooked white beans 1l water 1/2 tsp ground turmeric 2 bay leaves 250g basmati rice Salt to taste 200g sweet potato cubed 1 tbsp all purpose seasoning 1 tsp smoked paprika 1/2 tsp ground cumin 1 yellow plantain (1) Marinate your chicken thighs with the peri marinade, then let marinate for at least an hour. Then cook in the air fryer or frying pan. Cook the sweet potato in the same pan or air fryer as the chicken (2) To make the rice, bring the water to a boil, then add the bay leaf and beans then cook for 1 hour. Remove the bay leaf, then add the turmeric and salt to taste, then strain, remove the beans and reserve the broth. I like to be so precise with rice, so I measure out 600ml of the broth, to cook the 250g of rice. Place in the same pot, season to taste and don’t be shy, the rice will absorb a lot of the salt. Add the rice, cover and cook for 15 minutes. Remove the lid and fluff with a fork, then set aside. 
(3) Now combine all the ingredients for the plum salad, then mix well and set aside. Lastly fry the plantain in oil or airfryer. Now you have everything read #mealprep #highprotein #healthymeals #cooking #fyp
