Roast, Spray, and Cup! 💫📷🔥 . To quench or not to quench? . Quenching is basically spraying water on coffee beans right after roasting them and once in the cooling tray. The main benefits are cooling them down faster and reducing the degassing period (roasted coffee resting time). We’ve been enjoying experimenting with roasting techniques, times, and roast levels with our Roest Ultra 200 , a whole new world! 💫 After a few cupping sessions, we found that spraying coffee with water right after roasting lowers the time needed for resting. Even when cupping coffee immediately after roasting, the quenched batch had more developed tasting notes and felt more rested, with less grassiness compared to the normal batch side by side. The difference is not massive, but it’s there and interesting to try. Have you tried quenching coffee after roasting? What roasting machine do you use?
