Homemade Chicken Soup  🐓🥕🌿  This right here is a staple in my house during the cold months! It's easy to make, comforting, delicious and packed with protein — Once you make this, you’ll never want the canned stuff again! Enjoy it as is or serve it over noodles or rice.  FULL RECIPE ⬇️  INGREDIENTS (~6 servings)  - Extra virgin olive oil  - 1 large yellow onion (medium-diced) - 1 stalk of celery (sliced ~1/4 in thick) - 16 oz of carrots (peeled and sliced ~1/4 in thick) - 1 bunch of parsley (finely chopped) - ~3 lbs boneless skinless chicken thighs - 10 cups chicken bone broth  - 4-6 tbsp fresh minced garlic  - Seasonings: Italian blend seasoning, salt, pepper and garlic powder.  Additional Toppings: - Crackers (optional) - Fresh chopped parsley  Note(s): Some measurements are estimated, adjust ingredients to your personal preference.  DIRECTIONS  1. Prep and slice all of the veggies. 2. Coat the chicken thighs with olive oil and season generously on both sides with Italian blend seasonings, salt, pepper and garlic powder.  3. Get a dutch oven or large pot going over medium heat. Drizzle in some olive oil and sear the chicken thighs for ~2-3 minutes per side then remove and set aside.  4. Add the veggies into the dutch oven along with the minced garlic. Season with the same seasonings above and let sauté for ~5-7 minutes mixing frequently. (Tip: You can always add more seasonings at the end, so don’t go to heavy) 5. Next, add in the chicken bone broth. Make sure to scrape the residue on the bottom of the pan to get that extra flavor then add the chicken back in along with the juices. Bring it to a low simmer, pop on the lid and let it cook for ~35-45 minutes. 6. Take the chicken out and shred it up then add it back in along with the parsley. Mix till well combined and let it continue cooking over low heat for another 5-10 minutes. Taste and add more seasonings if needed. 7.
