The liver, still warm, meets onions slow-cooked in lard, a splash of rough wine, and crushed garlic. Spread thick on coarse bread, it is not delicate, it is honest, and it demands hunger. There is history in every bite. Pork pâté dominates village tables because the pig is winter’s backbone, sacrificed around Ignat, a ritual older than memory. Duck and goose tell a slower, richer story, their livers heavy with fat, echoing old European techniques long before anyone called it luxury. The mixture is never rushed. It is ground, folded with butter or lard, seasoned by instinct, sometimes sharpened with black pepper or thyme from the yard.
