@owen.han: Red Braised Pork Belly 🐷 (Hong Shao Rou) * 1-1.5 pound pork belly cut into 1” strips * 2 medium size star anise * 4 lumps rock sugar * 1/2 cup soy sauce * 1/2 cup chinese cooking wine * splash of dark soy sauce * 1 to 1.5 cup water * 1 bunch scallions, cut into large pieces * 1 nice size ginger (2 thumbs worth), peeled, and sliced thinly * black pepper to taste * 1-2 dried red chili peppers, crushed * 1 small strip dried cinnamon bark 1. Put pork belly into boiling water and boil for 5 minutes or so, to blanch the meat and get rid of the scummy blood water. Drain thoroughly. 2. Medium-high heat, in a stewing pot, add a touch of oil and put the pork belly strips in, skin side down, until you hear the skin popping and the skin is nicely browned 3. Add soy sauce, wine, water, scallions, ginger (and crushed chili peppers) (and dark soy sauce) (and cinnamon bark). Add a nice dash of black pepper. 4. Bring to a boil, then turn down to low heat to gently simmer. 5. Cover and simmer for 2 hours. 6. Serve with rice or with thick noodles.

yooo you gotta make caramel in the oil before adding the blanched pork!! important step and adds tons of flavor, colour, and really helps the end result be sticky ooey gooey amazing. My vid on this dish is up if you wanna compare notes!!
