These crispy meat-filled ‘dumplings’ are a delicious snack to have in the middle of the table surrounded by lots of other mezze. Getting Kibbeh right ultimately comes down to texture more than anything. The outer layer needs to be smooth, cohesive and just elastic enough to stretch / mould without cracking. It then needs to crisp up whilst frying whilst the inside stays juicy and rich. In the article I run through the full method - from selecting the right cud of meat and bulgur wheat to form the perfect outer shell, through to the rich, meaty filling.
