The first conundrum about the impossibility of knowledge is called Meno’s paradox. I forgot to add it in the captions

Why does it have to be innate? We have senses and an environment to interact with from which we can learn, even without an initial intent to learn.

You're conflating the unknown with the unknownable. there are things that we know are unknown

This is all well and good. But the basic a priori structures that evolution gave us are there because they are just unavoidable aspects of any reality. Anything that exists must be a specific way, otherwise it’s identical to anything else including its negation. Making it formally identical to nonexistence. And anything that exists in a specific way can be thought about with classical logic and can be put into categories. The ones you mentioned span all possibilities so it’s not like we are missing anything that matters. The original argument though is the answer. Minds can’t exist without a priori structure. Which means that is more fundemental and so reality can be rationally investigated with classical logic. And so we know many things by deduction applied to observations.

how can we make truth claims while the foundation of that claim is ambiguous

knowledge has subsets and these can be activated or not activated, the environment outside plays a great role for us to use our knowledge effectively

why would we not be able to learn something we don't know? why can we not know nothing at birth? there is no proof for these claims

We can have meta knowledge and lack first order knowledge, and use this meta knowledge to seek for first order knowledge

Or perhaps the cogito is the only foundation necessary for knowledge. Existence itself is the foundation of knowledge, that we exist and connot not exist. Then we can make distinctions I'm our experiences of existing. And then catagorize those distinctions
