These helped me so much to understand different parts of sourdough! Hydration was a big one, people would often ask “why doesn’t my dough look like that?” It’s often because there is more or less water. Storing it in the fridge is such a time and money saver! Doing it properly and to my advantage was a game changer! Reading crumbs has been super helpful for assessing “how” I did! any tips on what to do with the starter when i travel? i started it yesterday and ill skip feeding today but ill feed it tomorrow. i travel for a month to a month and a half in the summer and i fear thats wayyyy too long to leave it in the fridge, should i take it with me and feed it once a week while travelling orrr??

time is not a good measure for bulk fermentation. Recipe, starter strength and other environmental factors impact time. % rise is more accurate.
