DAY 9/30 OF BIBLICAL EATING: FALL RECIPES 🍂 Busy fall mornings need breakfast too! And this is one of my favorite make-ahead breakfasts because unlike a lot of egg dishes, it actually tastes GOOD reheated. 👏🏼 HIGH PROTEIN CRUSTLESS QUICHE 🍳 Make it once, slice it up, stick it in the refrigerator, and breakfast is already handled for the next few mornings. Serve it with some fresh fruit, sourdough toast, or whatever works for your morning and GO. Makes 8 slices Ingredients: • 6 large eggs • 1 cup cottage cheese (or full fat greek yogurt) • ¼ tsp black pepper • ½ tsp salt • ½ cup shredded cheese • ½ cup mix ins (optional: extra cheese, veggies, meat) • Butter for greasing the pan To make it: Preheat your oven to 350°F. Using a blender or hand mixer, combine the eggs, cottage cheese, salt + pepper until blended. Grease a pie plate or 8x8 baking dish generously with butter. Pour the egg and cottage cheese mixture into your dish. Top with mix ins and shredded cheese, then lightly press them into the egg mixture with a spatula. Bake for 35–45 minutes, adding a little extra time if you’ve loaded it up with additional toppings. Slice into 8 pieces and refrigerate leftovers for up to one week. This is what I mean when I talk about making Biblical Eating practical. It doesn’t have to mean standing over the stove making a from-scratch breakfast every morning.
