The people in the comments don’t know the difference between blanching vegetables and boiling vegetables. These vegetables were blanched, hence why they’re still green and vibrant. They were not boiled…..

Blanching green vegetables with a tiny pinch of kaun (potash) is a common cooking method many of us were taught.It is added directly into the hot water while blanching,not for boiling the vegetables for long,but to help keep the leaves bright green,soften them quickly and maintain a smooth texture for soups and sauces.
The amount of kaun used depends on the quantity of vegetables you are cooking—the more vegetables,the slightly more kaun you may need,but it should always be used in very small amounts. Too much can make the vegetables too soft,reduce nutrients, and affect the taste.
After 30–60 seconds in the hot water, the vegetables are removed immediately and drained,so they still stay fresh, green, and tasty.
