Ingredients: - 1.5 lbs ground beef - 1/2 cup grated Parmesan cheese - 1/4 cup almond flour - 1 cup grated zucchini - 1/2 cup grated carrots - 1 cup chopped spinach (fresh or frozen, drained) - 2 large eggs - 2 cloves garlic, minced - 1 tsp salt - 1/2 tsp black pepper - 1 tsp dried Italian herbs - For the glaze: 3/4 cup canned crushed tomatoes, 1 tbsp olive oil, 1 tsp balsamic vinegar, 1/2 tsp dried oregano, 1/4 tsp salt Instructions: 1. Preheat oven to 375°F (190°C). 2. In a large mixing bowl, combine ground beef, Parmesan, almond flour, grated zucchini, carrots, spinach, eggs, garlic, salt, black pepper, and Italian herbs. Mix until well combined. 3. Transfer mixture to a lined or greased baking dish or a loaf pan. Shape into a loaf if not using a pan. 4. In a small bowl, mix crushed tomatoes, olive oil, balsamic vinegar, oregano, and salt to make the glaze. 5. Spread the tomato glaze evenly over the top of the meatloaf. 6. Bake for 35-40 minutes, or until the internal temperature reaches 160°F (71°C).
