Serves 4: ~420 calories, 32g protein, 38g carbs, 16g fat per serving Ingredients: - 4 medium sweet potatoes - 1 lb ground beef - 1 packet taco seasoning or homemade - 1 large avocado, sliced - 1 cup cottage cheese - 2 tbsp honey - 1 tsp sriracha - 1/4 tsp red pepper flakes How to: - Preheat the oven to 400°F and place the sweet potatoes on a baking sheet. Bake for about 1 hour or until soft. - While the potatoes bake, cook the ground beef in a skillet over medium heat. Add the taco seasoning and stir until the beef is fully cooked and coated. - Mix the honey, sriracha, and red pepper flakes to make the hot honey. Warm for 10–15 seconds in the microwave until runny, then stir. - Slice each baked sweet potato open and fluff the inside with a fork. - Top with the seasoned ground beef, cottage cheese, sliced avocado, and a drizzle of hot honey.
