Would be better to cook at 200c without the tinfoil and baking paper. Once the internal gets to 150, take it out and the carry over cooking gets it to 160 long enough to kill all bacteria. Once out the oven and slightly cooled, put it in the fridge. This lock in juices and you get a more charred chicken breast that's moist.
