Garlic Potato Topped Chicken Pots the ultimate cosy lunch 😍 chicken and veggies tossed with chicken gravy & topped with garlic butter crispy potatoes, parmesan & crispy onions. Less than 400 calories a portion, meal prep & freezer friendly too 👌🏼 SAVE for your next lunch idea 📌 Ingredients (serves 2): 400g baby potatoes halved  10g lighter butter spread (I used Flora)
2 tsp chopped garlic  2-3 sprigs of fresh parsley chopped  200g chicken breast diced  Salt  Pepper  1 onion diced  1 medium carrot diced  1 tsp mixed herbs 40g frozen peas  30g chicken gravy granules  200ml hot water  10g parmesan grated  1 tsp crispy onions  💕Microwave the potatoes for 6-7 minutes until tender.  💕Season the diced chicken with salt and pepper.  💕Fry off the chicken in a pan until sealed.  Add in the onion and carrot, frying until softened and the chicken is cooked through.  💕Toss the potatoes with spread, 1 tsp garlic and half of the parsley until combined. Air fry at 200 degrees celsius for 10-12 minutes, shaking part way through until golden and slightly crisp. Or bake at 200 (fan) for 15 mins. 💕Once the chicken is cooked, stir in the garlic and cook for 30 seconds until fragrant.  💕Add the mixed herbs and peas for a couple of minutes.  💕Mix gravy granules with hot water and then pour in the pan. Cook for a few minutes until thickened.  💕Divide the chicken filling between two dishes (I used 400ml oven safe ones). 💕Top with the potatoes before sprinkling over the parmesan and crispy onions.  Meal prep:
Once cooled, cover and store in the fridge for 3 days or freeze for 1 month. Microwave for 3-4 mins until piping, bake in the oven at 160 degrees celsius(fan) for 15-20 mins or air fry at 180 degrees for 6-8 mins. Defrost before reheating.
