A “100-year-old sourdough starter” is not actually 100 years old in any meaningful biological sense. That “100-year-old starter” isn’t actually the same microbes from 100 years ago. Starters are constantly changing every time you feed them. New microbes come in from your flour, water, and environment, and the old ones get diluted out. So over time, it becomes a completely different culture. Age doesn’t create better flavor either, fermentation, flour, and technique do.
