Start with a clean griddle. Any leftover food, fond, or crusty bits can make the eggs stick. 2. Ingredient size matters. If your meat, veggies, or fillings are too big, they can tear the omelette and make it hard to get good coverage. 3. Watch your temp. Eggs like around 325–350 degrees, but not all griddles heat the same. Even my Blackstone on low can hit around 425, so sometimes you have to turn a burner off, cook on the cooler edges, or splash a little water down to bring the temp down. 4. I like a 3 egg omelette. It gives you enough surface area for cheese and fillings, but it’s still easy to fold. Too many eggs gets too big, and 1 or 2 eggs usually doesn’t give you enough room to work. Honorable mention: play around with your cheese. Shredded, sliced, sharp, melty, whatever you like. That’s where you can really change up the flavor.
