You’ll need: • 1 tin no-drain tuna • 1 spring onion • 1/4 red onion • 1/4 red pepper • Handful of sweetcorn • A couple of jalapeños • 2 tbsp mayo • 1/4 tsp chipotle paste • Grated cheese • 2 slices of bread • 1 tbsp mayo + garlic butter seasoning (for the outside) How to: 1: Finely chop the spring onion, red onion, red pepper, sweetcorn and jalapeños 2. In a bowl, mix the tuna with the chopped veg, mayo and chipotle paste 3. Lightly toast the inside of your bread (or both sides if you prefer) 4. Layer grated cheese, the tuna mix, then more cheese and close the sandwich 5. Mix mayo with a little garlic butter seasoning and brush onto the outside of the bread 6.
