For example: Why wipe out the pan and throw away flavor? Why not lean harder into seasoning the chicken twice? Why not let the rice absorb every bit of browned chicken fat and spice? That’s what this updated version does. And more importantly, it reveals something that took me a while to articulate: This recipe is not just a recipe. It’s a blueprint.
