Just proper sourdough rolls 🍞✨ This dough sat overnight (9 hours), got just 1 stretch & fold…(because I fell asleep 😁) and still baked into crispy, airy rolls with those beautiful open bubbles 😍 Sometimes simple really is enough. Recipe below⬇️ Save this for your next bake and share it with someone who loves sourdough 💛 Overnight Sourdough Rolls / Ciabatta (8 rolls) Ingredients: 160 g sourdough starter (100% hydration) 240 g water 420 g bread flour 10 g salt Method: 1️⃣ Mix starter and water until milky. Add flour and salt, mix until no dry bits remain. 2️⃣ Cover and leave for 30 minutes. Do 1 stretch & fold (or more if you have time). 3️⃣ Cover and leave to rise overnight (about 8–10 hours) at room temperature. 4️⃣ In the morning, tip dough onto a floured surface. Gently stretch into a rectangle. 5️⃣ Cut into 8 pieces. Place on a lined tray. 6️⃣ Preheat oven to 200°C. Place an empty tray inside. 7️⃣ Pour boiling water into the hot tray to create steam. 8️⃣ Bake rolls for 15 minutes with steam. 9️⃣ Remove the tray with water and bake another 10–12 minutes until golden and crisp. 🔟 Cool on a rack and enjoy 😋
