The best Thai Steak Salad!🥗This is my new hyperfixation. Full recipe below:  Salad:  2–3 cups red cabbage, thinly sliced 1/2 red onion, thinly sliced (soak in cold water 10 min) 1 cup cilantro, chopped (including stems) 2 tbsp basil, chopped 2 tbsp mint, chopped 4 green onions (green parts), thinly sliced 2 carrots, julienned 1/2 large english cucumber, julienned 1/4 cup crushed peanuts (garnish)  Dressing:  2 tbsp shallot, finely minced 3 tbsp fish sauce 4 tbsp lime juice (1 lime) 1.5 tbsp coconut sugar 1 tbsp cilantro, finely chopped 2 tbsp olive oil (save 1 tbsp for sautéing garlic) 3 cloves garlic, minced (sautéed)  Pinch chili flakes (optional) Protein:  Steak of choice, cooked to medium-rare (I used sirloin, but skirt is also a goood option!) Instructions: Soak sliced red onion in cold water for 10 minutes. Add drained red onions, red cabbage, cucumber, carrots, basil, mint, cilantro, and green onions to a large bowl. In a small bowl, combine minced shallot, fish sauce, lime juice, coconut sugar, chili flakes (if using), and 1 tbsp chopped cilantro. Whisk until sugar dissolves. Feel free to adjust coconut sugar & lime proportions to preference!  In a cast iron skillet, Pan-fry steak to medium-rare. Transfer to cutting board.  Add 1 tbsp olive oil and the minced garlic to the same pan then remove from heat. Stir for until fragrant (about 30 seconds). Scrape the garlic & oil into the dressing and whisk to combine. Slice the steak against the grain & add to the salad bowl, pour over the dressing, and toss gently to coat. Finish with crushed peanuts
