Because your food is made by humans probably two different humans two different days and it’s really hard to get employees to make it exactly the same every time. As chefs and restaurant owners, we definitely strive for consistency. It is the mark of a good restaurant and a great team. But sometimes someone is just broken up with their partner or is super hung over or just done with that job and no longer cares anymore. Human error is the hob goblin of every business.
