Wet: 2 ripe bananas (225g) 90g soft Medjool dates (soaked in hot water 5 min) 55g melted coconut oil 2 eggs 1 tsp vanilla Dry: 100g almond flour 50g oat flour 25g vanilla protein powder 12g ground flaxseed ½ tsp baking soda ½ tsp baking powder ½ tsp salt 1 tsp cinnamon Blend dates and bananas together until a food processor or blender until smooth - add eggs, coconut oil, and vanilla and blend until smooth (don't over blend) - whisk together dry ingredients - add wet to dry and mix just until combined z - add chocolate chips, walnuts, flakey salt, or chopped dates if you prefer!
