Pour into the wet ingredients and fold in with a rubber spatula. Set aside. Make the filling: in a small bowl combine all the ingredients and mix well. Scoop 3 tbsp of cookie dough, flatten, then scoop 2 tsp of filling. Wrap the cookie dough around the filling making sure it’s closed to prevent leakage. *I made 8 big cookies with this dough* Place 6 dough balls in a baking pan with parchment paper.
