@poppycooks: This is how you NEED to make your cauliflower cheese 🧀🙏 I finish mine off in the air fryer to save room in the oven, but you can shove yours in the oven if you want to. Recipe below 👇 50g salted butter 50g plain flour 500ml milk 50g cheddar cheese, grated, plus extra for the top 30g double Gloucester, grated, plus extra for the top 1 tbsp wholegrain mustard 1 medium cauliflower, broken into florets, leaves roughly chopped Instructions 1. Place a small saucepan over a low–medium heat. Add the butter and allow it to melt. Then, using a spatula or wooden spoon, gradually beat in the flour, about a tablespoon at a time, until you have a thick paste. You don’t want the paste to start browning – if you’re worried just take the pan off the heat to slow things down a little as you add. 2. Once all the flour is in, cook, stirring, until you have a dough-like consistency and the paste is coming away from the sides of the pan. 3. Little by little, add the milk, making sure you allow the first addition to fully incorporate into the paste before adding more. Keep mixing to avoid lumps – switch to a whisk if you need to. Season generously with salt and pepper, then tip in the wholegrain mustard and cheeses. Whisk until well combined. 4. Find a baking dish that fits into the basket of your airfryer. Squeeze in all of the florets and the leaves into the dish and smother with the sauce. Sprinkle over the remaining cheese and pop into the airfryer for 20-30 minutes at 170ºc/340ºf, before finishing it off with 10 minutes at 190ºc/370ºf. #cauliflowercheese #sundayroast #airfryer

If you drain and let the cauliflower rest and dry, it's fine, I hate raw cauliflower. It doesn't cook fully in 20 minutes and the cheese burns quickly

Same with lasagna noodles. Why do we cook these beforehand?! Just use regular noodles and it soaks up the sauce! Adding a 1/2 cup red wine to your sauce helps too 🤭😝

Try steaming the cauliflower so the florets are still a little underdone. That will mitigate any rawness once it has been baked. Happy medium between crispy and mush!

May be controversial but I don't like a cauliflower cheese on my roast. I like either on the side in a separate dish, but really it should be enjoyed as thing on its own with some crusty bread I think 😋

Nah u don’t need a roux, melt cream cheese, grated cheese, butter and cream, microwave ,whisk out lumps, and add Dijon. Don’t need flour 🙄 it’s the best cheese sauce everrrrr - gluten free & keto. Ur welcome
