Stop 🛑 everything you’re doing and run and make this cake! Five simple ingredients, a blender, and the perfect slice to go with your coffee or tea ☕🍰 It’s delicious just as it is, but if you want to jazz it up, add the date syrup icing! ✨ Link to printable recipe and tools used in this video can be found on my website at sivanskitchen.com Ingredients • 12 ripe Medjool dates, pitted • 1 cup hot coffee (or hot water) ☕ • 3 large eggs 🥚 • ½ cup (120 mL) avocado oil, light olive oil, or canola oil * Optional pinch of salt • 1½ cups (210 g) self-rising flour Optional flour substitutions • Almond flour: 2 cups (180 g) almond flour + 1 teaspoon (5 g) baking powder • All-purpose flour: 1½ cups (210 g) all-purpose flour + 1 teaspoon (5 g) baking powder Optional date syrup icing • 1 cup (150 g) powdered sugar • 3 tablespoons date syrup (or maple syrup) • 2 tablespoons coconut milk or milk of your choice, plus more as needed Instructions 1.	Preheat your oven to 350°F (175°C). Spray your baking pan with nonstick spray. 2.	Place the pitted dates in a heatproof bowl and pour the hot coffee over them. Set aside to soak and soften. Allow the mixture to cool until lukewarm before blending. 3.	Add the eggs, oil, and softened dates with all the coffee to your blender. Blend for about 30 seconds, or until smooth. 4.	Add the flour and pulse just twice, briefly, until incorporated. If any flour remains, gently fold it in by hand. Don’t overblend, as this can make the cake dense. 5.	Pour the batter into your prepared pan and gently tap the pan on the counter twice. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean. Baking time will vary depending on your pan. 6.	While the cake bakes, prepare the icing. In a bowl, mix the powdered sugar, date syrup, and milk until smooth and free of lumps. The icing should be thick but pourable. Add a little more milk, a few drops at a time, if you prefer a thinner consistency. 7.	Let the cake cool completely before icing so the icing stays on top instead of melting into the warm cake. Pour over the icing, slice, and enjoy! 🤎 You can also bake the batter in muffin tins for individual portions—just reduce the baking time and check for doneness earlier. #sivanskitchen #date #datecake #EasyRecipe #baking
