Enquire within😏 Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀 Mini egg chocolate crunch cake Chocolate cake • 380 g plain flour • 3 tsp bicarbonate of soda • 1 tsp baking powder • 1 tsp salt • 400 g caster sugar • 300 g soft light brown sugar • 4 eggs • 240 ml oil • 360 ml buttermilk • 4 tsp vanilla • 360 ml hot coffee • 130 g cocoa powder Ganache • 400 g milk chocolate • 250 ml double cream • 30 g unsalted butter • ½ tsp vanilla extract • Pinch of salt Cornflake topping • 500g milk chocolate • 400g cornflakes • Pack of mini eggs Chocolate Cake 1. Preheat oven to 160°C fan and line a traybake tin. 2. In one bowl, mix all dry ingredients. 3. In another bowl, mix all wet ingredients (except the hot coffee). 4. Combine wet and dry until smooth. 5. Stir in the hot coffee at the end. 6. Pour into the tin and bake for 45–55 minutes, until set. Ganache 1. Heat double cream until just steaming. 2. Pour over chopped chocolate and leave for 1 minute. 3. Stir until smooth and glossy. 4. Add butter and a pinch of salt, mix until silky. Cornflake Crunch 1. Melt chocolate gently until smooth. 2. Pour over cornflakes and mix until fully coated. Assembly 1. While the cake is still warm, poke small holes across the surface. 2. Pour over the ganache and spread evenly. 3. Leave to cool and set completely. 4. Spoon over the cornflake mixture and spread gently. 5. Finish with a generous scattering of mini eggs. #whoshungry #fyp #eastercake
