Instructions 1. Cook the Bulgogi Beef     * Heat oil in a large skillet over medium-high heat.     * Add ground beef and cook until browned, breaking it apart.     * Drain excess fat if necessary.     * Stir in soy sauce, brown sugar, sesame oil, garlic, ginger, gochujang, and rice vinegar.     * Cook for 3–4 minutes until the beef is coated and slightly caramelized.     * Stir in chopped spring onions and sesame seeds. Set aside. 2. Make the Queso     * Melt butter in a saucepan over medium heat.     * Whisk in flour and cook for 1 minute.     * Gradually whisk in milk until smooth.     * Stir in gochujang and reduce heat to low.     * Add cheddar - stirring until melted and creamy. 3. Mix the Gochujang Mayo     * In a small bowl, whisk mayonnaise, gochujang, and vinegar/lemon juice until smooth. 4. Assemble the Nachos     * Preheat the oven to 180°C (350°F).     * On a large ovenproof platter or sheet pan, layer Doritos Cheese Supreme.     * Sprinkle over shredded cheddar cheese and spoon bulgogi beef evenly across the chips.     * Add diced onion and jalapeños.     * Drizzle warm queso over the nachos.     * Bake for 5–7 minutes until the cheese is melted. 5.
