All you need is pork, sugar, salt and a few spices. After a few days of curing and drying, you get a flavorful, tender homemade charcuterie perfect for sandwiches, appetizers, or a charcuterie board. Once you try making it at home… you might never go back to store-bought again 😍 Save this recipe and try it yourself! ⸻ 🥩 Recipe Ingredients • 1 pork tenderloin (about 500–600 g / 1–1.3 lb) • about 300 g sugar • about 400 g coarse salt • 1 tsp black pepper • 1 tsp garlic powder • 1 tsp sweet paprika • ½ tsp hot paprika • optional: marjoram or Italian herbs Instructions 1. Trim the pork tenderloin and pat it dry with paper towels. 2. Cover the meat completely with sugar and refrigerate for 24 hours. 3. Remove from the sugar, rinse lightly and pat very dry. 4. Cover the tenderloin with salt and refrigerate for another 24 hours. 5. Remove from the salt, rinse and dry very well. 6. Rub the meat with all the spices. 7. Wrap in cheesecloth or parchment paper, tie with kitchen string and hang in a cool place or place in the fridge to dry for 5-7 days.
