Who remembers this cake from back in the 70s? Sock-it-to-me Cake Recipe Preheat oven 325° Bake 60 -70 mins 2 1/2 Sticks Salted Butter room temp 1/4 Crisco veg Oil 3 cups Sugar 6 large eggs room temp 1 tbsp Vanilla extract 1 cup Sour cream room temp 3 1/4 cups Swan Down Cake flour 1/4 tsp baking soda Streusel Filling 1/4 cup light brown sugar 1/2 cup crushed pecans 3 tbsp cinnamon 1/2 tsp nutmeg Vanilla glaze 1 cup 2 tbsp powdered sugar 3 tbsp of whole milk 1 1/2 tsp vanilla Mix all these ingredients up in a 2 cup measuring cup or bowl until smooth In a bowl add sifted cake flour and stir it with a whisk. In another bowl add light brown sugar, pecans, cinnamon and nutmeg and stir up with a spoon until combined well. In a mixing bowl cream butter, oil and vanilla. Then gradually add in sugar in 3 parts, once all added, cream mixture for 7 minutes on a medium high speed. Scrape down sides of bowl and add eggs one at a time and then add Sour cream mixing on low. Now while still mixing on low add cake flour in 3 parts and add your baking soda separately being careful not to overmix just until flour is incorporated. Then with a spatula scrape down bowl and fold batter to make sure everything it mixed well. Place half the batter into a prepared pound cake pan and spread it evenly. Spoon the streusel filling ontop of the batter evenly and pour the remaining batter over the streusel filling and tap cake pan to releases air bubbles and bake until done. Toothpick should either come out clean or have a few crumbs on it is fine. I like to flip this cake out of the pan after 15 minutes of cooling so I can flip it back over for the top side of the pound cake can face up. Let pound cake sit out and cool down for 25 mins. Finally I drizzle glaze all over the top and finish with chopped pecans on top! You don't have to wrap this pound cake at all and it's so moist. Hope y'all enjoy! #newrecipesposteddaily #followmyrecipes #whatsfordessert? #vintagerecipe #phototrend
