15 Days Of High Protein Meals day 12: One Pan Creamy Sun-dried Tomato Orzo ☀️ 🍅 🧄 Ingredients: ✨2 Boneless Skinless Chicken Breasts ✨1 Tbsp Minced Garlic ✨1/3 Cup Sun-Dried Tomatoes in oil, chopped ✨1 Cup Dry Orzo ✨2 Cups Chicken Broth ✨1/2 Cup Half & Half ✨1/4 Cup Parmesean ✨2 Large Handfuls Baby Spinach ✨1 Lemon ✨Olive Oil ✨Seasonings: Salt, Pepper, Garlic Powder, Italian Seasonings, Red Pepper Flakes directions: ✨Pound the chicken breasts thin. Season generously with salt, pepper, garlic powder and italian seasoning. Heat olive oil in a skillet & cook both sides of the chicken. Remove when done. ✨Add more olive oil into the same pan, and over medium low heat, sauté the minced garlic & sun-dried tomatoes until fragrant. ✨Add in the orzo and toast both sides for about 1-2 minutes. Pour in the chicken broth and bring to a simmer. Once it’s at a simmer, cover & cook for 10-12 minutes or until most of the liquid is absorbed and orzo is tender. Be sure to stir consistently. ✨Stir in the half and half, parmesean and baby spinach. Stir together until the spinach wilts & sauce thickens. ✨Add juice from 1/2 lemon & red pepper flakes.
