Episode 4 - chicken fajita rice bowls🍋🥗this is such staple dinner in our house - it’s full of flavour, high volume, packed with protein and takes little effort😍😍 enjoy for just 617 calories and 47g of protein! Makes 2 servings Ingredients - 140g basmati rice (uncooked weight) - 300g chicken breast - 1 red bell pepper - 1 green bell pepper - 1/2 brown onion
- 100g sweetcorn - 1/2 ripe avocado - 2 tsp cream cheese - 1 tbsp tomato puree - Splash of water - Handful of rocket leaves
- 1 tbsp olive oil - 1 tsp garlic powder - 1 tsp onion granules - 1 tsp paprika - 1/2 tsp chilli powder - 1/2 tsp mixed herbs - Pinch of salt & black pepper Method - Cook the rice according to package instructions until fluffy. - Meanwhile, slice the peppers and onion into strips. Add the olive oil to a heated pan followed by the peppers and onion then cook on a medium heat for 5-6 minutes until softened. - Slice the chicken into strips and add to the pan along with the garlic powder, onion granules, paprika, chilli powder, mixed herbs, salt & black pepper. Cook for another 8-10 minutes until the chicken is cooked through and golden. - Stir the tomato puree and a splash of water through the chicken mixture until evenly coated. - Remove the chicken and pepper mixture from the pan and pop to the side. - Add the sweetcorn to the same pan and cook for a couple of minutes until slightly charred. - Mash the avocado in a small bowl with a pinch of salt & pepper. - Build your bowls with the rice, charred sweetcorn, fajita chicken mix, mashed avocado, cream cheese and chopped rocket then finish with a pinch of salt and pepper then enjoy!
