@mumsfoodies: Sandwich Thins Recipe 💝⬇️ 300ml lukewarm water 7g instant yeast 1 tbs sugar or honey 20ml olive oil 500g bread / strong flour 1/2 tbs salt Whisk lukewarm water and yeast together, add sugar and whisk again. Add the oil, flour and salt and mix until roughly combined. Knead on a lightly floured surface for 5-10 minutes (10 is best if you can) cup the dough, drag it towards you to form a tight ball. Lightly oil a clean bowl and rub some oil over the dough. Place it inside and cover and rest for 60-90 minutes. Decompress the dough take it out and then place it on a well floured surface or a baking mat like I used (this is important as when you roll it out you don’t want the dough to completely stick to the surface. Roughly shape it into a rectangle before rolling it out. To get the shape roll lengthways, width ways and diagonally. A dough scraper or metal spatula can help you shape it by pushing in the edges. Roll to about 2-3mm thick. I cut into 4 columns and 6 rows to create 24 as they were for my kids. You can make them a bit bigger if you wish. Place on a baking tray lined with parchment and cover & rest for 20 min while your oven heats up to 210C Just before cooking fork holes into them close to the edges so they don’t puff up. Bake 9-12 min 200C (check after 8/9 min) depends on size & oven. If you want them as soft as possible place in a bowl lined with a tea towel as soon they’re out and cover with a tea towel. Store airtight for up to 3-4 days then use as toast. I like to slice mine open and freeze. They’re defrost in an airtight bag or container within 1-2 hours.
