so you’re not gonna actually sauté anything if it’s covered in cream and stock (water). to saute, oil the pan, let the gnocchi sit in it for a few minutes, let it crisp, then once one side has gotten a crust, give it a toss to get it evenly crusted, THEN add your stock and cream. you’re basically just boiling it by adding the liquid immediately
