Hi Chef, I know you have THIS in your repertoire: Pepper and Egg sandwich made with Italian frying peppers (also called banana peppers?). They are not hot, but mild and are light green in color. I’m in Connecticut and that’s how I had them growing up in a breakfast sandwich and sometimes with fried onions.

I make that on the barbecue. The little char from the barbecue flames adds a little extra flavor. I like the grated cheese in the end to give it more depth
