Apple Cinnamon Rolls (No-Knead & Extra Gooey) Dough * 1 tsp yeast * 2 tbsp sugar * 343 g milk (about 1½ cups) * 490 g flour (about 4 cups + 3 tbsp) * 1 tsp salt * 60 g softened butter (about 4 tbsp) * 100 g softened butter (7 tbsp) (for spreading over dough) Apple Filling * 3 apples, peeled and cut into small squares * 1 tbsp butter * 1 tbsp brown sugar * 2 tbsp sugar * 1 tsp cinnamon powder * 1 tsp vanilla extract Instructions 1. In a bowl, mix the yeast, sugar, and milk. Add the flour, salt, and 60 g softened butter and mix until a sticky dough forms. Coil fold the dough several times, then cover and let it rest for 20 minutes. Coil fold again, cover, and let rise for 1½ hours or until doubled in size. 2. Meanwhile, prepare the apple filling. Add the diced apples, 1 tbsp butter, brown sugar, sugar, cinnamon, and vanilla to a pan. Cook over medium heat, stirring occasionally, until the apples are tender and all the liquid has evaporated. Let cool completely. 3. Line a baking pan with parchment paper. Sprinkle a good amount of brown sugar mixed with cinnamon powder over the bottom of the pan. 4. Roll the dough into a large rectangle. Spread the 100 g softened butter evenly over the dough, sprinkle with brown sugar mixed with cinnamon powder, then spread the cooled cooked apples evenly on top. 5. Roll the dough into a log and cut into 6 large cinnamon rolls. Place them in the prepared pan. 6. Cover and let the rolls rest for 15–20 minutes. 7. Before baking, pour 1 tbsp heavy cream over each roll. 8. Bake in a preheated oven at 350°F (175°C) for 25–30 minutes. 9. As soon as they come out of the oven, cover with a clean kitchen towel and let them cool until warm. 10. For the cream cheese frosting, beat 115 g softened cream cheese with 30 g softened butter until smooth.
