If you love the dumpling lasagna recipe but want something even easier and healthier, this is for you. It tastes just like mandu jeongol, a warm, hearty Korean dumpling hotpot. For my family and so many Koreans, @bibigo.global is the ultimate go-to for mandu. Maybe it’s because of how generously filled they are, but whether you steam, pan-fry, or add them into dishes like this, they always turn out so so good. And I’m so happy that I can now easily find bibigo mandu all over the world, including local supermarkets here in Melbourne. A little piece of home everywhere I go. 🥟 👩🏻‍🍳 Mandu Jeongol Lasagna Recipe • 12 mandu (I used pork) • 3–4 napa cabbage leaves • 1/3 pack enoki mushrooms (or any mushrooms) • 1/2 block tofu • Anchovy broth/stock Sauce • 1 tbsp soy sauce • 1/2 tbsp vinegar • 1 tsp gochugaru • 1/2 tsp minced garlic • 1/2 tsp sugar • 1 tsp sesame oil • Green onion • A pinch of hot mustard 1.Lightly defrost frozen mandu in the microwave for 1–2 minutes. 2.Cut cabbage, mushrooms, and tofu into bite-sized pieces. 3.Layer tofu at the bottom of a microwave-safe dish, then add cabbage, mushrooms, and mandu. Repeat layers. 4.Pour ~3 tbsp anchovy broth over the top. 5.Cover and microwave for 5–6 minutes. 6.Drizzle the sauce over and enjoy. #bibigo #bibigomandu #dumplinglasagna #dumpling
