Does the amount of oil at the beginning allow for a shallow fry. Would it work as well to use less oil? Does the abergine sweat in the shallow fry and does the amount of oil help drive the water out to keep it crispy rather than soggy? It paper towel I noticed had a lot of oil. Does that help keep them from getting sodden? What type of sauce it doesn’t appear to be fresh like others I’ve seen you do?
