That’s categorically untrue, northern latitude olive types get much less intense heat than the southern latitudes. Northern latitudes can accumulate max 350 mg/kg at best in normal conditions. Whereas southern latitudes have much intense heat which increases the polyphenol levels to protect the olives. Memecik can reach up to 600 mg/kg easily and Kilis Yağlık from Antep can reach up to 1000mg/kg. Northern latitudes not only in Turkey but Tuscany and Spain as well renowned for the fruitiness instead and in Italian pressing philosophy polyphenols are especially not chased. All the pressing mill machinery designed in the world not for extracting polyphenols in mind but fruitiness however some manufacturers claim otherwise.

This can also be observed in the early harvest designation in the north vs. The south. Early harvest in the north can start by August as the northern latitude olives stop producing polyphenols by the end of August and mature faster. Literally waiting has no upside if you are aiming artisanal production. However southern latitudes, polyphenol production in the olive keeps going until late November and early harvest is much later. Literally if you press southern latitude olives at the same time with the northern latitude olives, you get literally a suboptimal product.
