Down this way the thymus gland is a throat bread, pancreas is a sweet bread and the balls are mountain oysters, I’ll stick with steaks! Butchers all vary and then chefs have there own list of names again 🤷♂️

we called them sweet breads where I trained as well and then the glads were pronounced as switbreads

With us the sweetbread is the neck thymus, best in young new season lambs, as the lamb matures the sweetbread gland shrinks as its immune system grows more capable and takes over. Won’t eat balls, full stop! Chefs are a different breed ha ha!
