latex is acc so easy after u get past the first hump of difficulty. tbh you do urself a hark by using overleaf bc it oversimplifies things. download a good tex editor (i like texstudio + vscode) and read the docs

You may try Typst, it’s pretty new compared to latex, looks nicer and learning curve isn’t steep. I use it for my math notes and it gets job done

If you're processing the data in the table with python you can use tabulate to output a latex table. If you don't have any python skills just vibecode it

For starters, I recommend using overleaf and in the beginning to ask ai's about the templates. Also make new commands to make writing more efficient. If you want to work locally, then think about changing from windows to linux. Using the terminal is much easier to work with git and to install texlive and so on.
