Am I the only one who doesn't mind the texture of the skins left on? That's a lot of excellent fiber going to waste. As a diabetic I like the extra fiber to help with blood sugar regulation. ❤️

Cooking the chickpeas for 2.5 hours and a little bit of baking soda, you won’t need to peel them and I get the best hummus texture, gets me a lot of compliments. Got this recipe from a Palestinian cook book, it’s a family recipe.

I use a strainer and gently rub the tender peas like washing them against the holes. Creates gentle agitation. Then dunk in water and the skins float to the top making it easy to remove. ❤️

Tip--Boil cooked or canned chickpeas with baking soda for ten minutes and the skins will mostly come off. The tip for smooth hummus is to remove skins, but also blend with some pieces of ice and don't add tahini until the end.
